After completing the Compagnon des devoirs du tour de France, Xavier, with the help of his wife Valerie, opened their bakery in the town of Mouleydier, in southwest France in august of 1991. After falling in love with Indian Rocks Beach, the two along with their son Luigi, decided to make the big move and bring an authentic artisan french bakery to the so loved area. in 2003, Xavier and Valerie opened Cafe de Paris Bakery in Indian Rocks Beach and Luigi has since joined them in the family business.
